When Heather first moved to Chicago 7 years ago, she started working at a restaurant called The Bristol. They were and still are focused on using local, sustainable ingredients. This was one of the first times Heather had been exposed to a menu that changed constantly and she got to learn about foods she had never even heard of prior to that experience. On Wednesdays, she would sometimes go with a chef to Green City Market and help select produce that would be used in a new dish that week. Ever since then, she's been a fan of venturing out to the Market and getting fresh ingredients for cooking her own dishes at home.
What inspired you to get involved with Green City Market?
Before moving to Chicago, I thought that I had a great deal of knowledge of the food industry. However, joining The Bristol and learning about organic, sustainable farms taught me so much more. In my current position, I work for a Chicago Fire Soccer Pub and we aren’t in the position to work with these sorts of farms. I’ve missed having a connection to a community that cares about sustainability and this is why I joined the Green City Market Junior Board. I want to get back to working with organic farms and help educate young professionals as I was educated when moving here.
What’s the most delicious thing you’ve ever purchased from the GCM?
Italian plums! I had never eaten plums before and these little guys changed my life. So juicy and sweet!
What’s your favorite Jr. Board event?
A Mostly Veggie Affair! Great food, great drinks, and lots of fun for a great cause! What more could you want?
