Bio

Craig Dunek is the founder of Wisconsin Fermentation Company which prides itself on innovation, creativity, and sustainability. Currently their biggest focus is on black garlic that is sold under the brand Black Garlic North America. Craig lives in rural, southwest Wisconsin with his wife and three young daughters. He completes production of black garlic, garlic growing, and maple syrup production. Craig was previously working in research and development at Organic Valley and his education focused on drug discovery chemistry, but his real passion lies with the outdoors. Since forming Wisconsin Fermentation Company in 2012, he has been able to mold his dream “job.” Garlic planting, harvesting, and black garlic production throughout the year, and boiling down sap in the spring keeps him active, busy, and energized all year long. He looks forward to establishing and marketing new products.
