Kid-Friendly Winter Chopped Salad

Makes 4 servings
Ingredients:
  • 1 1/2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp honey (there was no maple syrup at the market today 
  • 1/4 tsp salt
  • Few pinches ground black pepper
  • 2 apples, cored and diced
  • 1 carrot, cut into a small dice
  • 1 golden beet, cut into a small dice
Directions:
In a medium bowl, combine olive oil, apple cider vinegar, honey, salt and pepper and whisk until emulsified. Add chopped apples, carrot and beet. Stir well to combine. Enjoy!
