Chatting with the Chefs: Lorin Adolph & Ben Lustbader & Sarah Rinkavage

A lifelong Chicagoan, Chef Lorin Adolph has been a Private Chef for the same family for the past 26 years. Learn how to take seasonal Green City Market ingredients and transforms them into an outstanding home cooked meal with Chef Adolph on Wednesday, October 19 at 10:30am at Green City Market Lincoln Park. 
What is your favorite Green City Market product?
Sun gold tomatoes
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
When I have the time, to try the varied restaurants the city has.
What is in your fridge right now?
Leftover Thai food, assorted peppers (from GCM, of course!), and LOTS of condiments. Mustards, fish sauce, mayo, gochujang, Calabrian chilis, anchovies, capers, etc.
What is one tip you have for home cooks shopping at Green City Market?
Make sure to see what each farm has on offer. Some may only have one item. Some may 
have a cornucopia, but they all made an effort to drive in from their respective farms, and lovingly
tended to their crops, so you never know what gems may be at each stand.
What is the one food you couldn't live without? 
 Summer tomatoes!!!

Originally from Pennsylvania, Chef Ben Lustbader moved to Washington D.C. after graduating with a degree in political science and Judaic studies to pursue an internship at the U.S. Holocaust Memorial Museum. It wasn’t until he took a kitchen job in D.C. that he realized his true passion was cooking. In 2007, Ben moved to Chicago to begin what would become an illustrious culinary career. He worked his way through the kitchens of North Pond and then Lula Café, where he met his now-business partner, Chef Jason Vincent. The two chefs immediately connected and together in 2009, opened Nightwood, Lula Café’s sister restaurant. In 2015, Ben teamed up with Jason and Josh Perlman (general manager) to open Giant in Chicago’s Logan Square, which launched in July 2016. Together in the kitchen, Ben and Jason create an ever-changing menu featuring unpretentious, Midwestern fare. What is your favorite Green City Market product?
I love getting fresh fruit (from Klug!) and eating it before I get home. 
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
 My favorite thing to do in Chicago these days is fish. A couple weekends ago, I went to Humboldt Park to fish. I caught nothing, but it’s a beautiful park, there’s often great music playing.
What is in your fridge right now?
My fridge is embarrassing. I have a few apples, a stick of salami, and a little cheese. And hot sauce.
What is one tip you have for home cooks shopping at Green City Market?
A good tip when heading to the Green City Market is to leave your shopping list at home. Go to the market with an open mind, and few expectations. Let yourself be wowed by whatever looks and smells best to you.
What is the one food you couldn't live without? 
I would have a really hard time living without broccoli. And hot sauce.


Since joining the Lula Cafe team in 2010, Chef Sarah Rinkavage has worked her way from garde manger to the lead position of chef de cuisine and has become known for her introspective, thoughtful, sophisticated culinary style. During her time at Lula, chef Rinkavage has achieved many impressive accolades, including inclusion on Zagat’s 2015 30 Under 30 and 2015 Chicago Rising Star Chef. Sarah places a strong emphasis on color and texture. Inspired by the palette of the season, she cooks with a painter's touch, pairing surprising, yet simple ingredients together in layers of flavor and form. Sarah has taken control over Lula's well-known Monday Night Farm Dinner series, in which three new courses are debuted each week. In her time at Lula, Sarah has created hundreds of unique new preparations for the series and continues to experiment each week. Chef Sarah's demonstration will immediately follow Chef Ben's on Saturday, October 22 in Lincoln Park. 
What is your favorite Green City Market product?
My favorite GCM product is the Klug farm grapes. I look forward to them every year. They are the most juicy, flavorful grapes. I am so addicted to them, they don't last long if they are around.
What is your favorite thing to do in Chicago (other than shop at Green City Market, of course)?
My favorite thing to do in Chicago is to hangout by the lake in the summertime. I love being by the water, it is so calming to me. I grew up on the east coast and miss the ocean. Its nice to be able to be by a huge body of water and a city at the same time. Its a great way to relax and unwind from the crazy restaurant life.
What is in your fridge right now?
In my fridge right now...sadly not much! I always eat at the restaurant and rarely get to cook at home. So you would find a large assortment of cheffy condiments, beer, and I believe there is a few cherry tomatoes, and some home made iced tea. 
What is one tip you have for home cooks shopping at Green City Market?
My tip to home cooks shopping at GCM is to be adventurous. There is such an array of beautiful produce that you can't get at any store. Go for the ingredients you may never have heard of before and look up some recipes. It may be the only chance you can get some okra, chinese broccoli, or cardoons that are also super local.
My second tip is to go to the Mint Creek stand and buy whatever they are serving up that day. Our cook, Brian, mans the grill every Saturday and always serves a super fresh and delicious breakfast sandwich using mint creek meat or poultry.
What is the one food you couldn't live without?
The food I couldn't live without is tomatoes. They are my favorite vegetable and so versatile. You need them in many aspects of cooking. And right now they are at their peak at the market. Amazing one this summer. I'm eating the cherry tomatoes at least once a day right now.
