Introducing: Lisa Kalabokis, Chef Educator & Head Chef of Abby's Crepes
This past May, Lisa joined Green City Market as our Chef Educator. GCM wanted a Chef Educator to further our mission of sharing good, local food with our communities. Lisa identifies with our mission, "What better way to do that than with our children?" This year, she is developing our edible education programs at a few participating Chicago Public Schools. "By teaching kids the importance of, not only eating, but cooking nutritious food, we are laying the groundwork for responsible future consumers," says Lisa.
Included in her work, Lisa heads our #Abby'sCrepesForGood crepe stand at all of our markets. Lisa chimes, "by taking Abby's Crepes in house, GCM is able to use those profits to directly benefit our food access programs, outreach programs, and our edible education programs that I plan to develop this upcoming fall."
Abby's Crepes was inspired by our Founding Director, Abby Mandel. She loved fresh crepes served in many European markets. Tying in her mission to highlight the local and seasonal Midwest bounty, Green City Market created Abby's Crepes. "We remember and celebrate Abby's life, not only through taking the operation in house, but also by cooking seasonally. We hope that our crepe varieties represent the seasons and the people who cared for the product from seed to harvest," she says.
What is Lisa most excited about? "To cook seasonally and challenge myself with ingredients that I haven't utilized before! The Midwest has so much to offer, especially in the summer. I am so thrilled to have the opportunity to work with Chicago's youth, teaching them the importance of good food and its preparation. I have found that kids are almost always eager to learn -- if it means they get to eat their lessons!"
