In March 2021, Chef Paul Virant reopened his restaurant Vistro as Vistro Prime, a neighborhood steakhouse in downtown Hinsdale. The menu features traditional steakhouse fare — steaks, chops, seafood — as well as the signature Vistro dishes guests have come to know and love. Local ingredients sourced from Midwestern farmers are highlighted throughout the extensive menu. Classic cocktails are the stars of the bar program along with a carefully selected list of wine and beer. Guests enjoy exceptional service from Vistro Prime’s welcoming staff in a warm, casually elegant environment.
