Two Avondale favorites - Honey Butter Fried Chicken and TriBecca's Shop - are happy to continue to support the GCM. Our casual, counter service shops serve craveable food made with local and sustainable ingredients and strive to foster a nurturing workplace culture and provide kind and friendly service. HBFC was founded by owners Christine Cikowski and Josh Kulp, who were early food sellers at GCM 2004-2011, grilling burgers for their now 20 year old Sunday Dinner Club. TBS is a partnership concept with chef Becca Grothe and Josh and Christine. Becca's husband Cam Waron, the Culinary Director for HBFC and TBS, also serves potato donuts at TBS under the name Tubers Donuts.
Pickled Prince will also be joining this year's Chef BBQ! Pickled Prince was created by Chefs Brian Greene and Alex Skrzypczyk in 2020. After being furloughed from the first Covid-19 indoor dining ban in Chicago, Chef Brian’s idle hands felt the urge to continue to cook & create. As life long mid-westerner chefs, Greene and Skrzypczyk have always loved to harvest and preserve the seasons fruits and vegetables in many forms such as but not limited to: giardinieras, salsas, pickles, hot sauces & jams!
Pickled Prince makes everything in small batches from our home base in Chicago to achieve optimal flavor. When seasonally available, all of our produce is sourced from farmers markets in Chicago and Down at the Farms, LLC - a farmer to farmer marketing and delivery service based outside of Fairbury, Illinois.
