Brasero: The latest concept from El Che Steakhouse & Bar Executive Chef & Owner John Manion brings bold, wood-fired Latin cooking to West Town's bustling restaurant row. The concept was born of Chef Manion's love for the live-fire cooking of Brazil that captured his imagination as an eight-year-old living in San Paolo. The menu blends South American culinary traditions with a Midwestern sensibility. The wine list, curated by wine director Alex Cuper, leans fresh and playful, focusing on low-intervention pours from up-and-coming winemakers in South and Central America. The list features 100 different bottles all under $100. The goal is to highlight the exceptional quality of South American wine at an exciting price point, allowing guests to explore and experiment. A list of composed cocktails also complements the menu. Brasero recently rolled out Sunday brunch as well. El Che: Executive Chef John Manion pays homage to Argentina's beloved asados, those traditional backyard barbecues featuring platters of rustic flame-finished grilled beef. Over 90% of the menu is cooked over a live-fire grill. While 100% of the wine list is dedicated to South American wines. El Che is the only restaurant in the United States to offer such an exclusive and curated wine program. Just as they honor Argentina's asados, they're proud to share the deep history and their love for South American wine with their guests.
