Last Saturday, Mia Arancillo joined us at GCM Lincoln Park for a Culinary Demo. Mia demoed her recipe for an Endless Summer Salad. You can find the recipe below:
endless summer salad:
- organic spinach - 2 cups
- microgreens - 1/2 cup
- baby tomatoes - 4-5 each
- organic corn - 1/2 ear
- organic black beans - 1/4 cup
- melon - 3/4 cup
- cilantro - garnish as much as you’d like
Salad dressing:
- Extra virgin olive oil - 1/4 cup
- 1/2 teaspoon cumin
- 1/2 teaspoon salt (Maldon sea salt recommend)
- Garlic - dash (1-2 pinches)
- Ginger - dash (1-2 pinches)
- Combine all ingredients in a bowl. Wisk well.
