This muffin tin potato au gratin recipe is the perfect fusion something simple and something fancy-ish — cozy, comforting, and a little elevated. We love this recipe because it celebrates ingredients you can find locally this time of year: fresh, local potatoes, ghee, herbs, and cheese. Perfection.
Ingredients:

1 lb. potatoes, thinly sliced (sourced from Jacobson Family Farms)

1 tablespoon ghee, melted (sourced from Gai Ghee Butter)

1/4 cup heavy cream, divided

Garlic powder

Onion powder
-
Salt and pepper

1/4 cup shredded cheese of your choice (we used Gayle's Best Ever Grilled Cheese! Pro tip: Gayle's sells the cheese they use in their famous sandwiches so you can recreate the magic at home!)
- Herbs for garnish from Smits Farm (or sub microgreens from Jacobson Family Farms)
Directions:

Preheat oven to 400° Brush 6-8 muffin cups with ghee and set aside.

Place 2 slices of potatoes in each cup and season with garlic powder, onion powder, salt, and pepper. Add potato slices, seasoning every few slices, until cups are filled.

Pour 1 tablespoon heavy cream over the potatoes in each cup. Bake for 25-30 minutes or until potatoes can easily be pierced with a knife.

Remove muffin tin from the oven and top each cup with cheese. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.

Let potatoes cool in the pan for about 5 minutes. Then, run a knife around each gratin to help release it.

Garnish with fresh herbs and serve warm.
